Hailing from the historic city of Kayseri in central Turkey, Kayseri Yağlaması (often affectionately called "Turkish lasagna") is an absolute masterpiece of comfort food. It features thin layers of soft flatbread stacked with a savory, spiced ground beef and tomato-pepper sauce, then crowned with cold garlic yogurt.
Traditionally, you pull apart the warm, juicy layers by hand to enjoy the incredible contrast between the piping-hot savory meat and the cool, tangy yogurt. Using store-bought or ready lavash makes this iconic regional delicacy wonderfully approachable for a weeknight dinner without sacrificing an ounce of authentic flavor!
Method
Prep & Yogurt Base:
- 1
Whisk the strained Greek yogurt, minced garlic, and a pinch of salt together in a bowl until smooth; set aside.
- 2
Finely dice the yellow onion and green bell pepper.
Brown Meat & Aromatics:
- 3
Heat a wide skillet over medium-high heat and brown the ground beef in its own fats.
- 4
Add the unsalted butter, diced onion, and green pepper, sautéing until the vegetables are translucent and tender.
Bloom Pastes & Simmer:
- 5
Stir in the tomato paste and red pepper paste, cooking for 1 minute until fragrant.
- 6
Add the salt, black pepper, sweet paprika, red pepper flakes, tomato purée, and hot water. Cover and simmer gently for 8–10 minutes to form a loose, rich broth.
Dip, Layer & Serve:
- 7
Dip the outer edge of each lavash into the simmering hot broth to soften, lay it flat on a serving platter, and spread 2–3 tablespoons of the meat sauce evenly over the top. Repeat the process for all layers.
- 8
Slice the stacked stack into quarters, top the center generously with the cold garlic yogurt, garnish with fresh parsley, and serve piping hot!
Chef’s tips
- The Edge-Dipping Technique: Only dip the outer edges of the lavash into the simmering broth. If you submerge the whole sheet, it can over-soak and become too soft; keeping the center slightly drier maintains the perfect structural integrity of the stack.
- Rich Meat-to-Fat Ratio: Using 15-20% fat ground beef gives the sauce its signature glossy richness. Do not drain the rendered fat before adding the butter and pastes—it carries deep flavor into every layer.
- Temperature Contrast: The magic of Kayseri Yağlaması lies in the contrast. Ensure your meat sauce is piping hot when assembling the layers, and finish with cold garlic yogurt right before slicing and serving.
- Quality Pastes: Authentic Turkish red pepper paste (biber salçası) adds an earthy depth that tomato paste alone cannot match. Use homemade or high-quality sun-dried pepper paste for the most authentic flavor profile.
