If you have spent any time scrolling through food videos lately, you’ve undoubtedly run into the massive viral trend taking over feeds worldwide: the Tortilla Kebab Skewer.
Taking inspiration from traditional vertical rotisserie kebabs, this creative twist stacks seasoned minced meat or chicken tightly within layers of soft tortillas on a skewer. As it cooks—whether roasted, air-fried, or pan-seared—the outer tortilla crisps up into an incredible crunchy shell while locking all the juices and savory spices inside the meat. It’s fun to make, an absolute showstopper for gatherings, and delivers incredible texture in every single bite!
Method
- 1
1. Prep & Emulsify Meat:
- 2
In a large bowl, combine the ground beef, squeezed onion, minced garlic, red pepper paste, chopped parsley, and spices.
- 3
Knead vigorously for 3-4 minutes until the mixture becomes tacky and paste-like, then chill in the refrigerator for 10 minutes.
- 4
2. Layer, Roll & Slice:
- 5
Lay a flour tortilla flat on a clean surface. Spread a thin, even layer (3–4mm) of the meat mixture edge-to-edge across the tortilla.
- 6
Roll it tightly into a log and slice into 2.5cm (1-inch) thick pinwheels.
- 7
3. Double Skewer & Bake:
- 8
Thread 4 to 5 pinwheels tightly onto two parallel metal skewers per kebab to ensure stability.
- 9
Place the skewers on a wire rack set over a baking sheet. Bake at 200°C (400°F) for 12 minutes on the middle rack.
- 10
4. Glaze & High-Heat Broil:
- 11
Whisk together the melted butter, pomegranate molasses, garlic powder, and chopped parsley to create the glaze.
- 12
Switch the oven to Large Grill / Full Broil (220°C–230°C / Max). Brush the top side of the skewers generously with the glaze and broil for 2 minutes.
- 13
Flip the skewers 180°, brush the other side with glaze, and broil for another 2 minutes until deeply caramelized and sizzling.
Chef’s tips
Double-Skewer Stability: Using two parallel skewers prevents the pinwheels from spinning or falling apart when flipping or brushing with glaze, keeping your kebab neat and even.
Squeezing the Onions: Be sure to squeeze all excess liquid out of the grated red onion before mixing. Removing the moisture ensures your meat paste binds tightly to the tortilla without making it soggy.
High-Heat Caramelization: Pomegranate molasses contains natural sugars that caramelize rapidly under the broiler. Keep a close eye during the final broiling step to achieve a shimmering, sticky glaze without burning.
The ASMR Crunch: Baking the skewers on a elevated wire rack allows the hot air to circulate completely around the tortilla pinwheels, rendering the beef fats and yielding an incredible crispy crunch.
